When buying 80mm cooling fans, what should I look for? Like what is considered good noise level, RPM, etc?

quiet fans (and the more expensive one) will come in at the lower noise end of 20dBA, somewhere about 21-23 are quiet.
RPM - most standard is around 2500, but you can get some that will go upto 3500 and beyond. (quiet versions may come in at arounf 2100)
as for the most important factor - the cost. A good quiet fan will come in at about $8-9

i have one of the 120mm vantecs in my media center, very quiet
