Core Temp vs. CPU temp

My computer's CPU temp and core temp is quite different. For example, when my CPU temperature is 32°C my core temp is reaching 40°C. Which temperature should I trust? This difference is rather annoying as my PWM fan speeds up according to my CPU temp, not my core temp.
 
Core temperatures are read from the thermal diode integrated into the chip itself and will allways be higher than the external sensor or sensors. Core temps are quite happy up to 70-80 degrees max
