CPU bottleneck question

I would atleast get an I3 2100 to hold you over. It's a pretty good CPU.

As for GPU's, I would definitely just go with gtx580 sli. But honestly gtx570 SLI offers way more bang for the buck. A 570 isn't very far behind the 580 (like 5%) yet it's $150 less. And if you buy 2, it's $300 less than 580 SLI. Or as someone else mentioned just get a 590, which is basically the same performance as 570 SLI.


And as for the PSU, the corsair 1050w would support anything you are suggesting-

No need to spend $350. The 1050w would even support 6990 quadfire and an I7 3700k no problem. That setup even overclocked would pull around 800-850w.

I dont plan to run more than one actual card, but maybe duel gpu cards.

the next gen amd cards are suppossed to use less energy anyway, do you think it would work with maybe 3 way crossfire on the new 7000 series?
 
If thats the case even the 1050 would be way overkill, but if you can swing it cost wise it'd keep your options open for future upgrades.
