Which matters depends on the type of person.
Benchmarks show the i7 gets little improvement from 3 slots being populated vs 1 (others show 2 being populated if memory serves me correctly)
The advantage is you theoretically have much more memory bandwidth available. The disadvantage is RAM has not really been the bottleneck for a long time.
