The DS3 claiims taht it only supports ddr2-800 memory at 1.8v with 5-5-5-5 or 6 timings.
"Notice: Only DDR2-800 memory supporting JEDEC approved 1.8V operation with timings of 5-5-5 or 6-6-6 is supported on Intel Desktop Boards based on Intel 965 Express Chipsets."
However, i seem to see many people using other types of memory with this board. What's up with that?

thinking of that ram. how would the mobo and ram work together? (i saw a few customer reviews with a ds3 and taht ram)

It supports any RAM. They say it only supports 1.8v @ 5-5-5 because that is the only thing they can gurantee will boot the first time with the early BIOS releases. Later ones have fixed most (if not all) of the RAM support problems.

It should be ok. On the off chance that it isn't all you need is a cheap stick of RAM (or take it to a shop and have them do this) and use the cheap stick to boot up and change the voltage then it will work.
