How hot is too hot?

When I first boot it up, processors are running at around 38-40 using TAT and 25-31 using SpeedFan. When I game, it tops out at about 50ish, highest it has spiked to was 56. I have a front 80mm fan and a back 120mm fan, plus the power supply fan. I was assembling it with my uncle.. who has been building computers for 20 years, he said the thermal paste that was already on there would be fine. I have had no visible problems yet and the fans don't surge.
I am just wondering if this is too hot, and should I do anything to 'fix' it.

Was 56C with Speedfan or with TAT? If it gets higher than 60C, I would start to be concerned. Download Prime95 and run two at the same time, and post your temperatures from both TAT and Speedfan then.
 
56 was with TAT, SpeedFan had it at about 44 at the same time, this brings up another question.. which one is right and why is the other so in accurate?
