What causes this crap >> so every line has this >>, what causes that?

Example:

>>The cow jump over the moon
>>The moon was full
>>The cow jump back over the moon

So what causes the >> to be inserted into the email and how can it be
prevented? Then it's out of alinment also.

To the best of my knowledge it cannot be prevented at your end. This is a product of the people that sent you that email. It has to do with options in their email client. The fact that you received the email this way indicates that it is out of your control so don't sweat it.

Is typically called Internet-Style forwarding/replying and is something that you have no control over. Actually the only person that has control over it is the Sender of the email, and even then sometimes it cannot be changed unless their mail client allows for you to change the way an e-mail is forwarded or replied to.
