I am buying this mother board:
EVGA nForce 680i SLI Motherboard - NVIDIA, Socket 775, ATX, (New T1 Version), Audio, PCI Express, SLI, Dual Gigabit LAN, S/PDIF, USB 2.0 & Firewire, Serial ATA, RAID

and was wondering if it is true that it will fry memory that requires more then 2.2V?

No... most motherboards automatically adjust to the appropriate memory voltage. You should be fine. You can also manually adjust the voltages (if your CMOS lets you)

When you first boot up the PC, go into the BIOS and manually set the voltage to whatever it is that the RAM is designed to run at, although it should auto adjust by itself, but if your paranoid I would do that.

oo good info i will do that :) does the mother baord tell you how much volts your ram should be between, so i can check and see if my RAM and mother board are compatable.

just check newegg for the ram's spec and it will show the voltage. sometimes it is written on the sticker on the ram.
