Fan installation help

I went out and picked up two antec 120mm blue led fans today. I dont care about the LEDS but I bought them because the box said, "Fan speed monitoring capability with compatible motherboards."
I was hoping someone could explain why the instructions for the fans say, "If your motherboard or power supply supports fan speed control, DO NOT connect the LED fan to that variable-voltage header or output."

Is it because I'm an idiot and "fan speed monitoring" means that you can only monitor the RPM's, not make it change? Or because the varying voltages can mess with the LEDs....which I dont care about.
What is the worst that could happen if I plugged this fan into the 3pin header on my MOBO with the varying speed capabilities?
