Fast Media Center OS

Hi, I want to build a media center/DVD-player, and I need a nice OS for it.
What I'm expecting from it:
It runs on x86 or AMD64 (doesn't matter which one)
It supports 1080p Full HD
It supports 7.1
It boots really fast, so I'm definitely not buying Windows.

Perhaps someone knows a few media center OSses and can tell me which one is the fastest.

Oh, and by the way, if possible, I'd like one that doesn't need you to login, and that gets instantly into a menu (like this or this after booting.
Internet support would be fun, but is not necessairy. It's mainly gonna be a DVD-player.

Why not windows??? If you have the right specs it will boot with in 20secs like mine.

There will still be faster OSses.
I have a tri-boot configuration with XP, Vista and Ubuntu, and Ubuntu is much faster than either XP or Vista. And it would be strange if Ubuntu would get slower than windows if you get a faster pc. Ubuntu should (logically) still be faster. But I want something even faster and more media center like than Ubuntu.
That's one reason for me not to use Windows.

Another reason is:
You said if you have the right specs. I'm not gonna put a QX9775 in something I think of as a DVD-player.
I think a simple Athlon 64 X2 4800+ EE should be more than enough. And I was even planning to buy 3800+ EE actually.
