Gaming rig, under $2000

Herro everyone!

Recently I modernised myself and preordered a massive pack of new video games. One of those (Deus Ex HR) just came in and I realise that my computer will struggle to play this game on any reasonable setting.

In the end (as is my ritual every 3-5 years) I decided to give this old computer to my Mum, and get a new one.

Now it has come to my mind that I am not that good when it comes to choosing parts to buy. This is where you guys come in :)

The below is what I found out myself, but suggestions always appreciated!

Mouse: Logitech G9x Mouse (Got it already)
Headset: Sennheiser PC360GAME headset (Got it already)
Speakers: Logitech 5.1 Surround sound... thingys (Also already owned)
Graphics Card: Duel Nvidea Geforce GTX560s
Moniter: Asus VH242H 23" or the B373H 27" Wide.
Keyboard: Razer Tarantula or the Logitech G110
OS: Linux (Already owned) and Windows 7 partition (not owned)
CPU: Some kind of Intel i7, preferably more than 2.0Ghz. I need to research more into it.
Ram: DDR3 8 or 16G total.
Powersupply: N/A
Case: N/A
Motherboard: N/A
Mousemat: Razer Sphex Gaming Mat (I don't know anything about mats. If there is a better one for under $20-30, please inform me :)

The N/As are the ones I am not sure about; cant decide or I dont know. I would greatly appreciate it if you guys could inform me about which motherboard and powersupply I should get. I give you big hug... and a cookie!

EDIT: Make that price about 1500-1750. Don't really have $2000 to throw around...

um, i'll throw you something way more budget efficient together, but do you plan to use miltiple monitors, and how many if so, also will you be doing anything other than gaming, as the i7 is just as powerful as the i5 in games, as only fsx is threaded to take advantage of the i7's virtual cores, so there is no benefit.
 
well with that budget was going for a beasty with the potential to go quad sli if he wanted or something, idk, but they have some combos with either that one or a very similar one, so would look for that, and everyone likes saving so prob will.
 
and also i see a razer is one of yuor choices for a keyboard, although from what i have seen razer does make cool keyboards and mice, from everything i have heard they tend to break father fast compared to other brands, and the customer support is horrible, sometimes taking up to 3 weeks to get even a response, so i would say go for a logitech, everything i hear about logitech is just good although lately i have been hearing the newer logitech products are having a few problems

So far I am going to get a i5 2500K as my CPU, I am still not sure about that. Also is it better to buy one of those HD 5970/GTX 590/HD 6990s than the equivalent in price of many GTX 580 Ti or 580 or anything else like that..
