Good Chipsets?

Wondering if some viewers can provide me with some good chip brands. What do people consider the best of the chipsets around. These tips will come into consideration while selecting my motherboard.

AMD or Intel? for a SLI configuration, AMD: nForce 590, Intel: 680. Non-SLI: p35, or Crossfire (dual ATI cards): X38 just as mep said :)
 
The P35 would be the choice for you then. The Gigabyte DS3 series are rock solid and use heatsink designs for quiet operation.
 
Thanks, I like Gigabytes too. Any other recommendations for chipsets for Intel motherboards(gaming rig), not planning on using SLI?

And should the Southbridge even be considered when purchasing a motherboard? I know it is certainly important, though it doesn't execute as important tasks as the Northbridge, but how influencal should the Southbridge be in your motherboard selection?
