How long does content stay in Google's cache for?

I updated my website a few weeks ago and a google search for the deleted info showed no results.

Now the deleted content comes up as being in the cache. Will it be there forever? And why did the content disappear only to come back again a few weeks later?

Does every single deleted piece of website remain in the cache or does google remove it?
 
Its cached until its overwritten I believe. There was a huge article about it on digg.com a year ago or so. You can request it not cache I believe.
