Hard drive swap

I plan on changing the hard drive to my computer. The hard drive that's in it now has bank records and other bank related documents. If i delete these documents then just transfer everything over from the old hard drive to the new, will these deleted files transfer over as well? (I don't want them to in any form.)

No, they shouldn't.

However, if you do an image copy the blocks data with the deleted marker may get copied but you won't see the files if you browse to where they are stored and the blocks will eventually get overwritten.
