Has this happened to anyone else?

I am trying to take all of my cds (both purchased and burned from the good old days of file-sharing), and burn them to my hard drive. It is all music files, and I'm burning all of it to a 400GB USB hard drive. I have ripped over a hundred cds, and now I'm into the cds that are full of the spoils of my file-sharing days. Here's the problem: When media player rips the cds it saves them all as unknown artist track no. 1, track no. 2, etc. I then have to go through these files and rename them correctly. No big problem just a little time consuming. Except for the cd that I have renamed the files for over ten time now that even after I rename the files and move them into a different folder, they mysteriously go back to their Unknown artist track no. 1, track no. 2 format. This is slowly driving me insane because I have about 70 more cds to rip and i dread this happening over and over. Any ideas, clues or similar experiences?
 
Right click on the file,
Properties,
Summary Tab,
Advanced Button,
Change the Artsist, Track Name etc there.
 
I appreciate your explanation, but I know how to do that part. The problem is what keeps happening is that I'll turn my pc off, and when I turn it back on, the files will be in the original folder they were ripped to with all the names changed back to track 1, track 2 etc. It's not holding the changes that I make. Any other ideas?
