how much could E1200 overlock?

You could probably get a good 1.2Ghz out of it. I had an E1200 a long while ago, but I had the FSB at 300 and the Vcore at 1.45 and I got it up to 2.8Ghz stable on a P35 motherboard.

It would be fairly easy to push to to 3.0Ghz, just never came around to it.

well if this is in an oem (store bought, dell/hp/etc.) you probably won't get anything really out of it.
 
You cannot overclock if you have a manufacturer's motherboard, like johnny said. You will also need an aftermarket cooler if you plan on getting that high of an overclock.
