How much should I OC?

Keep lowering the multiplier and the voltage until you get something stable. Try 3.6GHz with a slightly lower voltage. If that doesn't work, try 3.5, 3.4 etc.

What settings have you got for your RAM? That may be affecting your overclock.

The maximum clockspeed that didnt bsod was 3.78 ghz.
Everything about RAM is on default. (800mhz)

OK if 3.78GHz is working for you I'd leave it at that. Seems to me like either your board, cooling or CPU is preventing you from going any higher. 3.78GHz is a pretty good overclock for an E8400 - I wouldn't expect you to be able to get an E8400 much higher than that.

Stress-test it using Prime95 or BurnTest though, just to make sure it's stable.

Ill try to install Ubuntu and run it with 4ghz
i will stress it tommorow (bed time now)
 
Did you ever try booting into your Windows 7 install when your CPU was at 4.0GHz?

And did you make sure you disabled SpeedStep and TurboBoost (if the E8400 has that) and stuff like that?

Yes and no (it doesnt have that)
 
Hmm I think 3.78GHz may just be your ceiling. That's almost an 800MHz overclock though (E8400 is stock clocked at 3.0GHz isn't it?) which is pretty good. :)
 
I overclocked that same CPU on a customers build once. I was able to get it to 4.0 and that was with around 1.34 v. It handled great, i ran it on prime 95 for 24 hours to make sure it was stable before returning it to him. You should be able to get that atleast or close to it. Every CPU is a little different, even if they are the same model. The only difference between your computer and his thats very noticeable, is that he had a H100 water cooler on his.
