How to backup video/photo from iPhone to PC, and free up space on the phone?

My wife's iphone has tons of video and photo of our grand kids. Now she is running out of space on the phone.

I know that the phone's data is automatically backed up to the PC when I plug the phone to the PC (thru iTune). But I can't delete the video after the backup because the next time I plug it on, it will copy those video/phone back on the phone.

Is there a way to back it up to the PC and prevent it from going back into the phone if we don't want to. But also has the ability to restore the ones I may want as needed?

Sort of like backing up the computer onto a portable drive and then delete them from the PC. But it is always there to be restored when I need it.
 
There should be a check box for "manually sync" and you can choose to uncheck photos and stuff, or just move them out of iTunes and that way iTunes won't try to put them back on. I've only used an iPod with an iMac so my skills with Apple/Windows are non-existiant.
 
After playing with iTune a while, I found that iTune does not import Camera Roll photo and video into the computer. It said you have to import them manually thru Photoshop Element or other Photo App. I have Photoshop CS5, which is a higher version of Photoshop than the Elements, so I gave it a try.

Sure enough, in Bridge (the photo management sub program of Photoshop), there is an option to import from camera and device. The process is pretty quick and easy. I was able to create a folder for the camera roll data.

I further experiment how to restore them to my iPhone. I deleted some videos from the iPhone Video folder. Then I reload those video from my computer to a newly created video folder on my computer. In iTune, I checked to include that new folder. After sync-ing, the videos are back into my iPhone.

That is how it is done.
