How to overclock CPU, And stop MOBO!

I just got this I5-3570K And my mobo (Asus P8z77-V LK) Overclocks this CPU automatically to around 4.1 GHZ .... Now it runs fine and everything but the voltages seem high for the clock.

My question is how do i stop the MOBO from automatically doing it and just do it myself.

I doubt you can change the voltage if the board is using an auto overclock.

CPU may just be running in turbo boost, can't remember how far a 3570K will turbo boost to.
