How to pick a CPU cooler?

I've been researching parts for this particular build. Mostly it's just mental exercise, but it's also something to aim for:

The GPU will probably change over time.

Could you please recommend CPU coolers that match the AM4 platform and are also efficient and quiet?

PS.: Yes, I know. I've been pestering you with builds on a monthly basis. But after this, I'll be done for a while...

Cryorig H7 (need upgrade kit)

By the way, do you really need full tower case? If being quiet is important, go for those silent case like Fractal Design Define R5

Yes, I see that the 212 evo is highly recommended by many people. At a good price, too.

I guess the Define R5 is sound-proof. I like it as an option, plenty of space for huge video cards, lots of room. I do have one question though. With cases like this, you can install two optical drives. But how do you access them if it is all covered up?
