This depends on what you are trying to do. If you actually want to run linux on your ipod, the link from Motoxrdude should be fine. Simply using your ipod shouldn't be too hard, assuming the distribution you using (I'll assume its something with a 2.6 kernel- openSuSE, Fedora, Ubuntu, etc) is recent.
Usually its just a matter of plugging it in- you can transfer music *to* your ipod with something like the program called 'gtkpod', and amaroK should do so as well.
As for listening to your music, anything purchased through iTunes is likely to be encrypted, so you can only listen to it.

To give any more help, we'd need to know what kind of ipod you're using, you distro, etc. or you can take a look at these links (google is your friend!):
http://www.linuxjournal.com/article/8160 - a relatively technical article about getting ipod support
http://www.codejacked.com/using-your-ipod-on-linux/ - An Ubuntu specific tutorial; read this first to see if it answers any questions.
