I'm not satisfied with my Acer Chromebook 13 as it doesn't allow me to download software etc.
I need a certain software to do some video editing and I heard you can install Ubuntu on Chromebooks. Before I do it, I made a recovery back up in case of failure. Is there anything else that would go wrong?

Chromebooks run Chrome OS, an operating system *heavily* weighted to web/cloud-based software. That's partially why you're limited to certain software. Never tried Ubuntu on one (don't have a CB of my own), but I hear the Chrubuntu is supposedly awesome. Ubuntu installers are typically very user friendly, should be no problem installing the actual system. So long as you have proper backups of whatever you save locally on your CB (ie - what isn't auto-backupped to Google), you should be fine.
