Hard drive (bootable) in my PC is MBR partitioned. My external drive is GPT partitioned (2TB). Both are NTFS formatted. If I copy/move my documents from the MBR disk to the GPT disk (or vice-versa), will files on both disks be absolutely bit identical (metadata, NTFS permissions, ACLs, file attributes, owner information...)?

There is no reason why they wouldn't be. The difference between mbr and gpt is just the type of disk. With winodws 8 and beyond, GPT is now the new standard.
