Memory during overclocking.

Okay. E6400 / Corsair XMS2 PC2-6400C5 - here is what I did:

Change FSB to 275 (original 266);
RAM automatically jolts up to 825MHz (I think), so I put it down an option to 740MHz (I think);
Change FSB to 285;
Ram jolts up to 775MHz (I think);
Change FSB to 293;
Ram jolts up to 785MHz (I think);
Change FSB to 300;
RAM jolts back up to 800MHz on the lower setting;
Change FSB to 310;
RAM jolts up to 820MHz (I think), so I put it down another option to around 780MHz (I think);
Change FSB to 320;
RAM jolts back up to 800MHz (original speed, 2 settings lower than the original 800).

Can I just make sure that this is okay what I have done? I am currently running my E6400 now at 2.56GHz, and plan to bring it up to 2.7GHz - should I worry about changing my voltages?

If it's stable then you don't need to worry about the voltages. If it's not stable then raise vcore a bit as if I'm reading this right your RAM is no faster than it's supposed to be so it's not going to need more voltage.
