Is there a way for me to record phone conversations on my computer, or basically record conversations at all?... I have the Nokia 5610, and it doesn't record long enough... i only need it to confirm, when the customer confirms or accepts a contract...

If you call through Skype, I think there is program that will
record your Skype conversations. That is all I can think of
at the time.

Skype allows you to call phone numbers in North-America for $3
a month. All you need is headset. I bought a Logitech Clearchat
Pro USB for $20 during boxing day - down from $80. The voice
quality is fantastic.

The Skype costs might be different for calling a cell phone though.
