At stock, they are as near as makes no difference with the 6950 giving maybe 2-3fps difference at most in the majority of games.

The 560 however will overclock further than the 6950 will to give better non-stock performance
 
Even without OC (I'll make it when I need, so in 1+ year) is 560Ti HAWK better?
Are they any games that will use 2gb?

Generally no. I have noticed that in a few occasions I have used more than 1gb of RAM All of them are in Starcaft 2 when it is a 4v4 or when a mothership comes out. I would recommend getting a 2gb card since you are planning on using the card for a few years, game titles may start to require more RAM for their games. You might as well get the 2gb card and have a better chance of not running into that limitation later on.
 
I will use new PC for few year (maybe I'll do OC on it, when it will be needed).
I'm not a pro at OC (never did it), so I'll do (if I will) some small OC ;)
 
If your running anything above 1080p or doing any 3d gaming then the amount of RAM will matter. If your only running one monitor at 1080p then 1gb is enough.
