The second one is better for several reasons.
The processor is a newer generation, thus will be up to spec for longer.
Dual channel offers better performance than the tri channel that the 1366 i7's use, plus it has more ram anyway.
a single powerful GPU is better than 2 in CF/SLI. The GTX570 is a kick arse GPU as is.
