I am looking at building a laptop. I would use it for Web surfing, Email, Maps, simple Multichannel audio mixing like 8 channels at a time, and Video Recording, like video/Audio streams from a video camera, and maybe some Gaming.

I am looking at the HP ZD7000. I don't know if this would be overkill, or if I should go down to the 5000 series. Below are the Options and specs I can choose, I will make my choice bold. if anyone could tell me if I am building what I need, or if I am going overboard, or not upgrading enough that would be very helpfull.

1.0GB DDR SDRAM (1x1024MB)

1.5GB DDR SDRAM (1x1024MB+1x512MB)

i'd probably go with 2*256 RAM OR 2*512 RAM (whatever u can afford) 512mb is minimum for me. And i would definetly get Xp Professional, i have had issues with Home edition. Other that that i would have picked the same stuff.

I would add the 128MB NVIDIA(R) GeForce(TM) FX Go5700 it will add to the value of the computer if you wish to sell it in the future.

at least 512mb ram and 128mb vdo card. since you are going to do those things you might consider the media center edition. also you might reconsider the hardrive cuz is gonna get pretty damn hot in there with a 7200 unless with proper cooling.
