Need some recomendations for new build

I am getting ready to build a new gaming system and I'm having a bit of trouble on deciding what vid cards to use.I am staying with Nvidia but I gotta decide on either 2 GTX480's or 3 GTX 470's.But heres a list of the rest of the system for starters.

Windos 7 Ultimate 64bit
Asrock Supercomputer motherboard pci-x 16x16x8x8 (not 16x16x16x)
Intell Core I7 930
G-Skill Ripjaw DDR3 2000 ram 3x2gigs
Silverstone Ravin rv01 case
Silverstone Strider 1500watt psu
Monitors = 3 Asus VW266H 26inch (1920x1200 each)

I don't intend on going with 3D vision cause of the monitors 60hz refresh rate but I do wan't a 3 screen surround view.The monitors are already setup and running off of my current single 9800GX2.And yes it does work but not powerfull enough for gaming.
So maybe you can see my delima here.
2 GTX480's running pci-x 2.0 16x16x or
3 GTX470's running pci-x 2.0 16x16x8x
 
The video card choices were listed,that is the reason for this thread....

With the 3 monitors my resolution should be 5760x1200 and not 1920x3600 correct? I think thats how it scales.Anyways,I play stuff like Star Trek online,Metro 2033,Crysis,Need For Speed series,Dirt, etc.So I'm just wondering would 2 GTX480's at 16x16 run better than 3 GTX470's at 16x16x8x?
