need to streamline my upgrade

I'm looking to upgrade my current desktop which is currently running:
-evga 680i motherboard
-c2d 6600 2.60ghz
-4gb ddr2 800 ram
-2 60gb raptors raid 0
-1 320gb hd
-and 2 evga 8600 gts sli'd
-ran on XP Pro
-1000w psu (sorry I can't remember the spec)
-22" lcd dvi monitor

What I'm currently looking to get is:
-ASRock P67 EXTREME4 (B3) LGA 1155 Intel P67 SATA 6Gb/s USB 3.0 ATX Intel Motherboard
-Intel Core i5-2500K Sandy Bridge 3.3GHz
-G.SKILL Ripjaws X Series 8GB (2 x 4GB) 240-Pin DDR3 SDRAM DDR3 1600
-2) Western Digital Caviar Black WD1002FAEX 1TB 7200 RPM SATA 6.0Gb/s
-1) SAPPHIRE 100311SR Radeon HD 6970 2GB 256-bit GDDR5 PCI Express 2.1 x16
-CORSAIR Enthusiast Series CMPSU-850TX 850W ATX12V v2.2
-Microsoft Windows 7 Ultimate SP1 64-bit
-LG E2260V Glossy Black 22" Full HD 1920 x 1080p

I currently do some work from home using autocad 2008 and CS4 master suite and these are important to me for obvious reasons. I also need to be able to connect to work and to my house so use of remote desktop is also important(sorry, logmein or teamviewer is not an option) but I would like to do some light gaming from time to time on FPS and RPG platforms.

If anyone has any suggestions as to how I might be able to save some money with this please let me know!

you may be able to save you some money by downgrading to Win. 7 Pro, as it does everything that ultimate will except language packs, and bitlocker.

sounds like a plan thanks!

anybody else? I figure I'm already pretty close. I'm not a hard core gamer and speed isn't a HUGE issue for me. I do plan on setting up my hdd's for raid 0+1 more for backup than anything else. I have 2 ext 1tb drives to store important things on.
