New Build Advice?

Hey folks, I'm planning my first build (in the neighborhood of $1000) and am in need of feedback from knowledgeable folks. I was planning this build about 6 months ago before a family emergency/emergency trip halfway across the country obliterated my computer fund. First, I'll show you what parts I was looking at before and then I'll ask a couple questions. Also, just so you know, I don't overclock. I'd probably a'splode something.

Parts:
Intel Core 2 Quad Q6600 Kentsfield 2.4GHz LGA 775 Quad-Core Processor Model BX80562Q6600 - Retail

ASUS P5Q Pro LGA 775 Intel P45 ATX Intel Motherboard - Retail

SAPPHIRE 100225L Radeon HD 3870 512MB 256-bit GDDR4 PCI Express 2.0 x16 HDCP Ready CrossFire Supported Video Card - Retail

OCZ Reaper HPC Edition 4GB (2 x 2GB) 240-Pin DDR2 SDRAM DDR2 800 (PC2 6400) Dual Channel Kit Desktop Memory - Retail

Western Digital Caviar SE16 WD5000AAKS 500GB 7200 RPM 16MB Cache SATA 3.0Gb/s Hard Drive - OEM

Antec Three Hundred Black Steel ATX Mid Tower Computer Case - Retail

The rest of the parts have since been deactivated by Newegg.

So, now it's question time.

Should I go to the core i7? I know it's more expensive, but you can get one for less than 100 bucks more that the one I'm looking at, right?

Should I go for more RAM? I was thinking maybe 6 or 8. I know I'll need a Vista 64, but I think I can get that for 99 or so from Newegg.

What parts would you recommend for the stuff that I'm missing? What would you replace in what I have above?

Thanks in advance. I know this might be tedious for some of you, but I also think some of you really like helping out with this stuff.

Edit: I forgot to mention what I'll be doing with this baby. I play some games, but I'm not a hardcore gamer or anything. I'd like to have the option of picking up new games and playing them though. I also run Photoshop and the GIMP.

Heres a build with a little better MB, better video card and faster memory for about 905 shipping included

Nice, dude. I appreciate you putting that together. Now I do have some cash left in the budget. Would you upgrade to an i7 or get more RAM..or both? Do you think I need more on my power supply? I was told I might want to go for 750W since I want to be able to upgrade it later.

That 600W will last a good long time, even if you decide to SLI/Crossfire in the future. If you plan to plug in a microwave then yes you should upgrade.
