Thanks for the comments guys. To be honest, one of the reasons why I went for a 6-core is because I do plan to run a few VMs here and there and my understanding is that the system will overall be a bit more stable on a higher core processor... I may be wrong on that, but that's my understanding.
Anyway, I went into town and went to a few PC and electrical places looking for a power supply, as I didn't ideally want to wait for delivery on an online purchase. I'm glad peoples comments so far have been Corsair over OCZ, as I found a Corsair and an OCZ PSU, pretty much the same spec... The OCZ was £5 cheaper than the Corsair, but I bought the Corsair as it looked much better quality, and I can't remember if the OCZ did or not, but the Corsair one came with a 3 year warranty, which is nice.
So I got a Corsair GS600 in the end, and I've got to say the machine has been massively more stable since installing the new PSU. Touch wood and all that superstition, I haven't had a single crash since replacing it, and I've given it a fair bit of work to do
