I find that even though the 6990 and GTX 590 is better 7970 has less heat and better upgrade possibilites like crossfire I'm not sure if you can do it with a 6990.

Yeah, 7970 is my official choice.

you can crossfire 6990's but it won't be way more powerful and running quad-fire seems like there'd be issues to me.

Mate, I have a HIS 6950 2GB. It can run Battlefield 3, World of Warcraft and Minesweeper on a 1920x1080 display. While doing so, it keeps two peripheral 1920x1080 monitors with Firefox and Skype running as well. World of Warcraft and Battlefield 3 are all maxed out on ultra and never drops below 59.9 FPS (Vertical sync enabled). It has trouble handling Minesweeper though.
