The files were never there and after syncing they have appeared.

Don't use iTunes. Use Windows Explorer to browse the contents of the iPod.

When you say it just popped up, do you mean you looked at your storage on the device from the device before syncing and checked it afterwards? Or are you saying you plugged the device into iTunes, iTunes said you have ___GB of Other, then synced it, then iTunes said you have 8GB of Other?
I ask this because there's a good chance iTunes hadn't updated its chart of how much and what data you have on the device... so that 8GB could have been there the entire time and you only noticed it once the iTunes chart updated.

Restored it then resynced from a backup. Its fixed.

If you aren't jailbroken, there is nothing you or we can do that tells you what is inside that folder. If you want to be sure, do a factory reset WITHOUT restoring a backup, and see if it's gone. You can always restore the backup after.

I restored from a backup. I do NOT want to lose any game progress!

If it didn't work all I can think of is that you have to restore it to factory settings... and not from a backup. I'm not a 100% sure but I don't see why it wouldn't work for you while it worked for others...
