I never want to turn off my Pentium 3 what settings though shal I put to make it sleep/hybernate when I'm not using it?

Display Properties > Screen Saver > Power...

what shal I select?

Turn off hard disks - is this good, or not needed?
System Standby - ?
System hybernates - ?

Turn off hard disks: depends on how much your PC uses the hard disk. The more it uses the disks, the longer the interval should be before they switch off automatically due to inactivity.
System standby: never
System hibernates: 10 minutes

you are fine not turning you pc off but i recomend you do a full boot up atleast once a fortnight to hybernate click start and turn off my pc then hold the left shift key that will turn the stand by into hybernate
