can i set it so i just starts to the latest version of windows

dual-booting is when you have more than one operating system (i.e. you have xp and vista at the same time, you chose which one to boot).
If you have the XP CD, then save everything on your hard drive that you need to cd's or flashdrives, or other hard drives, and install XP. do a complete format. If it asks you if you want to wipe the old OS, say yes.
Of course, ONLY do this if you really want to get rid of those other operating systems.
*Edit*: I am not sure how to make one of them default, I don't think you can.

I would wipe it, i don't see any point in have two OS systems
