I'm thinking of getting a couple of 250 gig hard drives for the system in my sig. and doing a RAID 0 setup. Would I be able to install the two of them and just transfer the data of my current drive and then just go from there? Or do I have to start from scratch? TIA.
 
You do not have to start from scratch. You can build the RAID array and them mirror over your HDD with a disk cloning program that you can grab from your hard drive manufacturer. Then just set your boot priorities to the array and you should be set.

EDIT: Here is a link to the seagate disk wizard. You will need to get it from whoever makes your HDD otherwise it won't work.

You should reinstall from scratch. The reason is you will be changing controllers (from SATA/IDE to RAID) and so Windows will not boot, you'll have to repair or reinstall.
