This is based on what my board allows me to set via dividers (bootable)

6GB 750MHz DDR2 5-6-6-15
4GB 1000MHz DDR2 5-5-5-10

What would you use?

Get 6GB, faster RAM doesn't amount for much unless there is a large difference. The 6GB with a bigger divider will let you overclock more and a faster CPU is much better than Faster RAM. Although you won't be able to run full dual-channel with 3 2GB sticks. Some motherboards support a hybrid configuration which will allow you to use dual channel with 3 sticks, in that case 6GB is fine. I'm not sure what programs you use but 6GB might just be a waste because games don't even need 4GB.

I actually have all the sticks here with me right now,

My 6GB is actually 2 x 2GB + 2 x 1GB which still runs in DC, I'm just trying to decide what to do, I'm used to the 6GB but contemplating taking out 2GB to run tighter timings and 250MHz more.

When i put 5gb in my system 2x 2gb sticks + 512+512...i cannot get a stable overclock....always fails,But with 4gb its fine :D

and they do run in dual channel.

4GB for me, there is no point in having 6 for me. All i do is Play COD4, manage my music, and watch some movies, and of course internet.

I only use 1.5gigs while i am gaming on high.?
and when i'm doing any of the other things listed i use 800mb-1000mb, not much use. 4 would be more than enough...

Fast ram>more ram.(for me)

There isn't even a considerable difference between 4gb and 6gb of RAM anyway. Even running Crysis on Vista will only use 2-3gb of RAM at the most. I would definitely choose 4gb of faster RAM.

"6GB DDR2 750MHz 5-6-6-15
4GB DDR2 1000MHz 5-5-5-10"

what do the numbers 5-6-6-15 and 5-5-5-10 mean?
also isn't the max for ddr2 800mhz (unless it's overclocked) and shouldn't it be 1066mhz instead of 1000?
