RAM question

I'm currently running 2 gigs of Kingston DDR2 PC2-5300 @ 333mhz. Will I notice a big difference if I get the same amount of 8500 RAM @ 533 mhz dual channel? Or should I get 4 gigs, the max amount my mobo can handle? I know XP will only recognize 3 gigs, but I plan on getting Windows 7.

You only gonna see a litlle more performanc in high end programs (like rendering or video editing) running in dual channel mode.
I believe that you are looking for responsivenese of your system when you are opening folders,or programs or anything else isnt it?
If thats the case,then buy as much RAm as your system can handle (its a great investment)
Your system can be upgraded in 2 ways,checking at the online manual from gigabyte and see wich ram they recommend for your system or go for example to kingston and see the exactr ram that works there:

OK, thanks. I've decided I'm going to start building an I5 or an I7 system, so I'm not even going to bother upgrading this system anymore, I'm just going to sell it after I'm done my new build. Hello pricey DDR3 RAM.
