Recording Software

So I need a recording software that will work with my microphone that time stamps and can run for 8-12 hours without issues for my PC. Format doesn't matter I just need a quality playback.
I think I may have a issue with my breathing while I sleep and want to verify it as I also am a HUGE sleep talker/walker so curious if I am waking myself up as well
