Selection of OS and Transferring Questions

So I recently built my computer in my sig and I'm looking to get it finally put together. I currently have have Windows XP Pro (SP3) and Windows 7 (32 bit or 64 bit). Which one would work better with my set up?

Then I currently have 2 - 80GB sata HDs, and I would like to get a larger HD like 160GB+ later. So lets say I install the OS and my programs on the 80GB for awhile, and then get the 160GB+ HD, how hard would it be to transfer everything to the 160GB and then make it my master HD? or would it be better to re-install everything fresh on the 160GB?
 
I would just use the hard drives you have. Use 1 80 gb for operating system and programs and the other one for your data. That way if you ever have to reinstall windows all our data is on a separate drive. Your best bet would be to install windows 7 though as its newer and support for XP runs out in june I believe.
