I have always just pulled them out of the USB port. Someone told me I should eject them first.
Does it make a difference?

You should eject them because if the drive is not done the writing you could lose the data.
The default Windows 10 action was changed recently for quick removal:

I'd still do it since you are telling the OS to finish any open writes prior to unmounting.
