SLI Explaination

I know what SLI is but I don't know how it works.
Q1: Can someone explain what it does exactly and how two gpu's correspond?

Q2: To go along with that, would 1 8800 GTX be more powerful than 2 8800 GTS 320mb's?

The 2 video cards correspond with each other using the SLI bridge, and via the PCI-E bus.
