Sound dampening

I am trying to modify my custom system to make it near silent. I currently have a 90mm exhaust; 120mm PSU fan; and my CPU fan (80mm masscool). I have an 80mm on the side and in the front of the case, but I unplugged them because the additional noise really didn't make a significant difference in temps (I run at 37*C CPU, and 25*C MB at idle).

I am going to buy a fan controller to slow the fans down, but how would I know if my PSU is getting too hot or not?
 
The psu, well I dont really think that will have a major effect whether your using less, or slower case fans. As long as the main air vents are not blocked then your be okay I should imagine. On most PSU now a days, they have one large fan on the rear of the case and one, which is basically facing towards the ground.
 
I'm sorry, I should have been more clear. I swapped out my PSU's 120mm fan for a quieter one, but it still isn't as quiet as I'd like it to be. I ran the molex out of the PSU case and now I have the option of hooking it up to a fan controller. I have a 120mm fan that blows air up into the psu from the bottom, with an exhaust on the rear....single fan setup. I figure that I will drop the speed down some with a controller. Is there a way to tell if my PSU is running too hot if I drop the fan speed too low?
