OK: iTunes is what you want! it rips CDs keeps all your songs very organized and will get all the track names from the CD data base. I would use ACC(Mp4) it is a much better compressor than Mp3, use constant bit rate(not variable). for ACC don't use a bit rate any lower than 128kbps preferably 192kbps and for Mp3 don't use any lower than 160kbps preferably 224kbps.
and if you want to copy the 5.1 DVD audio from a DVD video you need a DVD ripper(I use AOA DVD Ripper) to copy the write protected files to your hard drive, then you will need a program to separate the audio from the video(NOTE: this is a perfect copy which has no quality loss! it just separates the audio and video files) you will be left with an MPEG video file(.mpv) and an ac3 5.1 Chanel audio file (.ac3). which can be done with this software
