Transfer the OS

I'm building a new computer but keeping the hard drive from my old one. Would I be able to just simply plug it into the new motherboard and the OS would be install on that motherboard? I'm worried I may corrupt it or something.

The OS is installed on the HDD, not the mobo. So, YES. :D

Be sure to plug it into the master cable and/or make the appropriate changes to BIOS.
 
if its a different motherboard or a different graphics card you will most likely have to call microsoft and get a new key. You might be better off wiping then clean install and call it a day. i would be surprised if it worked.
 
Like tremmor says, it would be best to do a clean install of windows as the computer most likely won't boot up with the old hard drive attached that has windows already on it. The hardware from your old motherboard will be different then the new motherboard so it won't boot up most likely.
 
You don't have to do a clean install.Just plug that HDD in your new computer and then repair Windows using its CD or DVD disk.The REPAIR process will adapt the current Windows OS to your new hardware and it will work like charm.

NOTE: Be sure that the CD or DVD disk with which you are doing the REPAIR process of your Windows OS has the SAME service pack version as the one installed on your HDD!!!If it doesn't,you can always slipstream the service pack.
