two(2) good CPUs or one(1) great CPU???

So I'm looking at getting a new system and was curious as to which is better for things such as CAD and rendering (Maya, SolidWorks, etc.) The choices are

two(2) Dual Core Intel® Xeon® Processor 5140 (2.33GHz, 4MB L2,1333)
OR
one(1) Dual Core Intel® Xeon® Processor 5160 3.00GHz, 4MB L2,1333

Which would people recommend? I don't know quite enough about computers to know the major advantages/disatvantages to 1 vs 2 processors.

get the 2, since the difference on the 5160 is just 400 mhz more which isn't worth it
