Just for my understanding you are talking about running the game on 3 monitors right? Not just have multiple monitors and still running the game on one. For gaming if you use a multi display setup you go for 3 identical monitors. Otherwise you have the bezels in the center of the screen making it hard to play

If you are planning on running 2 570s in SLI you will still have 1250MB of memory for the SLI configuration. The memory is not doubled. It holds the same information on each card. All of the memory will be used but the information that is being stored in the memory will be identical on each card.

That is why you will still have a bottleneck with 570s in SLI If you are planning on gaming at a resolution higher than 1920x1080 you will see some performance issues with the memory. With that being said, I have no idea how much it will bottleneck. That really depends on the game.
 
I'll bet money your motherboard isn't up to running 3 570's, prob has x8/x8/x4 or less going if you're using 3 unless you got a super high end one, as in 300+, and also what is your psu, might be a little too weak to run 3.
 
I try to run it in one screen mostly so I can still do another thing on my 2nd monitor.

I use two of the exact same monitors.
