What do you mean 'stable' ?

So I OC my e8400 to 3.6G and try to run Prime95 for a while without getting 'restarts', however, at the 7th or 8th test it says 'error' of some sort.

Do you guys consider that stable?

or does 'stable' mean running prime95 with no error at all?

"Stable" means you should be able to run these kinds of stability tests for a certain amount of time (varies, depending on who you ask) without errors. Not sure how long it takes to get to the 7th or 8th test, but if it's not far in, then you're probably not stable.

With Orthos, I consider 8+ hours without crashing to be stable. With OCCT, 1 or 2 hours is good. Of course, you have to couple these synthetic tests with real-world use, and make sure you can do everything you need to do without getting crashes, restarts, BSODs, etc.
