Crazy Gravity (abandonware) - personal
FreeMind - professionally
Handbrake - personal
InfraRecorder - personal
Notepad++ - both
Scribus - professionally

Whatever comes in the FreeBSD and CentOS repos ;)

More specifically, probably openssh, apache, squid, nano, elinks. I set up a tac_plus server earlier at work for open source TACACS+.

Desktop wise, not really a lot. Maybe Notepad++ (I love the compare plugin) , Libreoffice on occasion. Thinking of swapping to Ubuntu full time on the desktop if I can get 3d acceleration pass-through working to a Windows 8.1 VM for the games that don't have Linux ports :p

I use FreeMind on a daily basis, and must say that it's really good. Basic use is very pleasant and intuitive, more advanced features are at your disposal when you look for them. The stability of this software is impressive, too.
